Summer weddings are the perfect time for light, fruity cocktails. Simply Southern Occasions has shared one of their favorite summer cocktails with us which is a Summer Watermelon Cocktail!

Watermelon is the fruit of summer. You’ll love this recipe utilizing the sweet fruit justice in the form of a boozy, colorful cocktail on the rocks. And, it’s not just made with watermelon juice – we’ve created a watermelon simple syrup from seedless melon and sugar so the vibrant, one of a kind flavor in every sip of the drink. Combine the watermelon juice and watermelon simple syrup with your favorite tequila, some fresh lime juice, and ice, and shake until your summer sipper is perfectly chilled. Serve in glasses rimmed with lime juice and coarse salt (or sugar, your preference) and add a little watermelon slice as a punchy garnish. Perfect for pool parties, a 4th of July bash, or your next trip to the lake – this is a Simply Southern summer staple.

 

Ingredients

WATERMELON SIMPLE SYRUP

2 cups seedless watermelon, cubed 1 cup sugar

 

WATERMELON JUICE

2 cups seedless watermelon 1/2 cup water

 

MARGARITA

4 ounces tequila (Don Julio Anejo) or your personal favorite 4 ounces watermelon juice 2 ounces lime juice 1-ounce watermelon simple syrup Garnishes: Coarse salt, lime wedges

 

How to Make It

Step 1

FOR SIMPLE SYRUP: Combine the watermelon and sugar in a small saucepan over medium heat. Use a potato masher or another utensil to mash the watermelon and sugar together, pushing out the liquid and dissolving the sugar. Simmer for 5 minutes, stirring frequently. Pour the mixture through a fine-mesh sieve set over a bowl or jar, pressing the watermelon to extract all the liquid. Set aside to cool completely. Makes just over 1 cup of simple syrup.

 

Step 2

FOR WATERMELON JUICE: Combine the watermelon and water in a blender. Blend until smooth, pour through a fine-mesh sieve set over a bowl or jar.

 

Step 3

Combine the tequila, watermelon juice, lime juice, and simple syrup in a cocktail shaker with ice. Shake until thoroughly chilled, about 30 seconds, and pour into glasses rimmed with lime juice and coarse salt. Garnish with lime wedges and serve immediately.

 

3-Ingredient Watermelon Pops

To make these pops, you’re going to need to make homemade watermelon juice or buy your favorite watermelon juice from the store. If these pops are for you (and you’re over 21), go ahead and treat yourself to an adult pop infused with tequila. But if you’re giving these to the kids, leave out the liquor and swap in a little sugar instead. Whatever you do, make sure not to mix them up!

 

Ingredients:

3 cups watermelon juice

1/2 cup tequila (gold or silver) or 1/4 cup sugar

Juice of 2 limes

 

How to Make It:

Stir all ingredients with a whisk until fully combined (and sugar is dissolved).

Pour into pop molds. Freeze for 4 hours or until firm. Enjoy!
